Eccomi tornata da Cervia, sono stati 4 giorni lunghi, a volte difficili, ma densi di idee, impegni, e amiche vecchie e nuove... ora Quiltitalia ha un nuovo direttivo e nuove sfide...
È ancora presto per sapere quale sarà la direzione in cui ci muoveremo, la cosa veramente importante sarà non dimenticarsi che, anche se con idee diverse ed a volte in contrasto, tutte noi eravamo lì perchè amiamo il patchwork e questo, piaccia o meno, significa che ci assomigliamo.

Here I am, coming back from Cervia and the Quilting WeekEnd of Quiltitalia (our national guild). We all had some difficult moments and some wonderful ones. I found old and new friends... Now we have a new President and a new board. It is too soon to know where we will go, but the very important thing is that we can fight and bicker, but at last, we all love patchwork and this unify us.

Color Palette Challenge - Done!

Here we are, with the Color Palette Challenge of January:

I think I has not been very "daring" with this one, but I was afraid I didn't have enough time this month to do all my duties. I have a retreat, starting tomorrow (I can't wait!!!), and usually I come home with my head full of projects and new techniques I want to try and never-ever enough time to do it!!! So I thought it was better starting with a little project, but actually made it! :)

2012 Free Motion Quilting Challenge - January

Hello everybody!
This year I am really really serious in trying to improve my FMQ-skills!
I signed up both for The Wednesday Quilt-Along with Leah Day and this FMQ Challenge, hosted at SewCalGal. To me 2012 will be the FMQ-year!
I completed the January tutorial, doing something very small, just a quick sampler with the threads I use in my quilts:

So the red thread is Rayon 40 Madeira, the multicolor one is Cotona 30 Madeira, the white on your left is polyneon Madeira, the last one (it seems white, but it is really a very light green) is Gutermann polyester.
Bobbinfil in the bobbin and a Universal 70/10 needle.

Rayon and Polyneon both stitches beautifully: no need to adjust tension.
Polyester seems "stiff" and rigid and does not curve smoothly.
Cotona was a nightmare, but it was my fault: I decided to try with the same needle, bobbin and tension and this has been a mistake: Cotona needed definitely a different needle and some trial-and-error in the tension department!

Quilt Along Wednesday #1

Ta-daaa! It seems I managed to did all my homework, so far, this month!
I'm busy tearing away the quilting in my Second Course Sampler (that's my UFO Challenge number 5), I'm a good point with my Color Palette Challenge of January and I did the exercises for the first Wednesday of this Quilt-A-Long, hosted by Leah Day. Next will be the 2012 Free Motion Quilting Challenge, but I definitely think I can manage (so far...)
So here's my production... ok, not so much of it, but it is a start!

Here is a close-up, I'm very proud of me: I used to think that stippling was not my piece of cake, because I'm a sort of "control-freak" somewhat and this smooth transition of forms that freeely blend together was too anarchy for my tastes... well, I think things are changing!

Orme sulla Spiaggia - Footprints on the Beach

Ho chiamato Orme sulla Spiaggia questo quiltino (65x65 cm), fatto usando il gioco "Musical Chair" dal libro Quilter's Playtime di Dianne Hire, visto l'uso dei colori, così "sabbiosi" appunto. Ho messo questi improvvisational nine patch "on-point" e infine l'ho quiltato con un semplicissimo stippling:

I called this little quilt (25 1/2 " square) Footprints on the Beach, I made it following the "Musical Chair" play from Quilter's Playtime by Dianne Hire. I set the improv nine patch on-point and quilted with a simple stippling (never miss a good session of FMQ practice!):

Definitely Crazy! - 2012 UFO Challenge

I mean... I have already joined a couple of year-long project (namely the Color Palette Challenge and the Free Motion Quilt Along), I have a few projects on my own (well, more than a few, actually, as usual...) and now... I read about the 2012 UFO Challenge and... I'm hooked! So here I am, with my list, but I'm following Judy's advice and I start humble and sensible (no Dear Jane, Judy, I swear!):

1. I will quilt (at last!) the RoundRobin 2009 made with the girls of Patchwork Caffè
2. at least 4 blocks done of the "Mistery-without Mistery" 2009 (definitely not my year, the 2009...)
3. add the border to Kate quilt, at last!
4. I will quilt at least 1 quarter of the Kate quilt (I really need to have this one done this year!!!) - if this number come before the n. 3, I will switch the goals, of course.
5. I will take away all the quilting in my Second Course Sampler...
6. I will quilt my Second Course Sampler...
7. I have prepared two tops for the Quilting Week-End of January, but only one will be done during the "How-to-Do a Perfect Binding" course, so I will need to bind the second.
8. At least a couple of blocks of My Whimsical Garden (I really like this project!).
9. I bought (mmmh, let me think... it was 2006 or 2007? Mah!) The Cat's Whiskers kit by Material Rewards... I want the top done, this year!

10. I started, some months ago, collecting large prints for "Carousel", from Cozy Modern Quilts by Kim Schaefer, I would like to cut the fabrics I have so far and start sewing some blocks together.
11. I will quilt one (another) quarter of Kate-quilt (see goal #4, for details)
12. And another quarter of Kate-quilt will be quilted! (Again, see #4 for details)... I really need to finish this (large!) quilt, but I'm so scared: it is sooo big!

Come ogni inizio d'anno, la mia testa è piena di progetti e cose da imparare... Quali sono i miei progetti per il nuovo anno? Quest'anno voglio assolutamente imparare a quiltare come si deve. Poi voglio migliorare il mio "piecing" e quindi mi auguro che le mie cuciture siano sempre da 1/4 e che le mie punte non siano mai tagliate e che i miei incroci possano sempre coincidere :)

Tra un mese (circa) si parte!!!!
Sì, perchè la mia amica Marina ed io andiamo al Quilting WeekEnd di Quiltitalia dal 19 al 22 gennaio, the Fiesta!
Non vedo l'ora di partire!!! Ci sono moltissimi mini-corsi interessantissimi tenuti gratuitamente da socie di Quiltitalia (uno anche da Cecilia, la mia prima insegnante e da Anita, con la quale ho fatto un bellissimo corso di quiltatura a macchina!). Noi abbiamo scelto l'applique a macchina e il binding perfetto.
Inoltre quest'anno ci saranno anche delle insegnanti straniere che faranno dei seminari di un giorno e siamo state così fortunate (beh... ci siamo iscritte per prime, direi tempestive!!!) da entrare al corso di abbellimento a macchina di Bernie Griffith!
Così potrò mettere all'opera la nuova trousse portalavoro, da un kit acquistato al precedente Quilting Week-End da AgoMago:

Non è un progetto nuovissimo, ma sto mettendo all'opera la mia fantastica Horizon... tra poco ci saranno novità...

Design Wall

Ecco cosa è appeso in questi giorni sulla mia "lavagna"... dei blocchi "improvisational" (seh! Lo chiamano "improvisational", ma vi assicuro che non c'è niente di improvvisato!!!!) fatti seguendo Quilters Playtime di Dianne Hire (quanto mi piacciono i suoi quilt!!!) e la copertina per la figlia di un'amica.
Come sempre la mia gatta se la dorme, mentre io lavoro alacremente ai progetti di natale!!!

Mancano solo i bordi!

Ecco qua, incredibile, ma vero, ho finito i pannelli della coperta di Cate... Ora devo decidere come fare il bordo. L'originale è un nastro di fiori, ma francamente preferirei qualcosa di più essenziale, mi sembra già abbastanza barocca così, per cui penso che sceglierò un bordo a nastro con greca negli angoli... però adesso ci sono i regali di Natale e ancora rimarrà un po' indietro... sembra la tela di Penelope!

And so here I am, to let you see my sewing room: it is not very long time I have a sewing room and I have to figure out a lot in my quest for the "purrfectly organized place"... well, I'm not very organized myself, so it's a very difficult task... by the way, I introduce you my sewing room:

Kaleidoscopio: ora anche quiltato!

Ecco qua, l'ho quiltato ed ora lo sto "bordando". Diventerà presto (spero prestissimo!) una piacevole aggiunta al piccolo divano che sta nella mia sala da pranzo e dove io cerco sempre di "spiaggiarmi" a leggere quando torno dal lavoro!

Piccolo com'è, potrebbe anche fare da base per quando la mattina mi alzo a meditare, chissà...

Questa volta ho sperimentato la "spara-punti" per l'imbastitura, una piccola pistola che spara degli aggeggini di plastica che servono a unire gli strati ed a tenerli fermi e devo dire che funziona piuttosto bene, anche se è talmente facile da usare che il rischio è di "sparare" un sacco di punti che poi devono essere, faticosamente, tolti uno per uno... il che è esattamente quello che è successo a me!

Per la quiltatura ho usato un motivo a spirale, che mi sembrava si sposasse bene con gli esagoni, accentuandone il movimento. Non sono gran che come "quiltatrice" a dire il vero, ma devo dire che, come dicono entrambe le mie insegnanti di quiltatura (ebbene sì, ho fatto 2-dico-2 corsi di quiltatura a macchina e ancora sono un'imbranata...), essenzialmente si tratta di praticare-praticare-praticare... come lo yoga, la meditazione, il tai chi, la bicicletta, la fotografia, il giardinaggio... insomma troppe cose e troppo poco tempo!

Beh, la cosa migliore è che è un altro lavoro (quasi)finito!

Dà grande soddisfazione veder crescere le strisce nere sulla mia lista delle cose da fare!

Stay at Home Round Robin: finished!

Here we are, at last, I'm a little bit late (for my usual standards, BTW), 'cause the dead line was, if I remember right, June, but, hey, it's summer! I definitely have the right to be a lot lazy, this time of the year!

So, here we are:

Honestly, I'm not very happy with my job, but I will display it in my sewing room anyway, because it will be a reminder about how much I have to work on my improvisational side. I'm a pattern follower kinf of quilter, probably because I'm lacking experience, but I feel that my quilter-soul needs more room, new ways to see everyday things... so I need to work-work-work... I'm ready, of course... Are we or not "daring quilters"?????? I definitely am!

Io sono appena tornata da un posto magico...
Dove si mangiano ottime crepes, ma soprattutto slurpose galettes, ad ogni angolo di strada...

Dove si visitano alcune delle più belle cattedrali gotiche mai costruite...

Dove c'è spazio per riflettere sugli orrori di tutte le guerre e sul coraggio di giovani sconosciuti...

Dove passeggiare sulla spiaggia assume un significato tutto particolare (specie se sta arrivando la marea)...

E dove il buio arriva tardi...

Ta-daaaa... I know this is unusual, but I have already finished the tenth round of the Stay at Home Round Robin!

This round we could decide if rest or quilt the top. I quilted my top by hand with a green thread and a off-white one; I just leave two blank space, waiting for the next instructions to decide what to do.

Dopo lo swap organizzato da Hilde&Hilde, purtroppo già terminato, i puntaspilli sembra stanno avendo un momento di gran gloria... non che fossero mai stati troppo dimenticati: d'altra parte sono un progetto perfetto per dare libero sfogo alla fantasia.

Ho perso lo swap, ma mi sono divertita a vedere i vari progetti e così ne ho provati un paio: eccoli!

Stay at Home Round Robin: Round 6-7-8-9 (yes, I've been lost!)

I usually have some moments (very long ones, indeed!) when I just can't sew...

From December to this very day I have had one of those awful moments, so now I'm running for the Stay at Home Round Robin... and here there are the rounds number 6-7-8-9...

I'm especially proud of the embroidery: one of my first ones!!!

Stay at Home Round Robin: Round 5

At the very last day of November here I am with the fifth round of the "Stay-at-Home-Round-Robin", hosting by Kate North...

For this step we had to add 2 pieces at the top (or bottom) of the previous blocks: one 4x6" and another 4x7" (finished size).

Kate told us there will be some rounds dedicated to embellish our RR, so for one of the pieces I decided to leave plenty of space.

For the other piece, I try a different set of colours and a tecnique I never tried, seminole. Mmmmh, I like the result, all-in-all, but admittedly, my seminole needs more and more practice!

Eccomi, proprio sul filo di lana, con il quinto round dello Stay at Home Round Robin ospitato da Kate North.

Per questo giro dovevamo aggiungere 2 pezzi, uno 4x6" e l'altro 4x7" (misura finita) sopra o sotto i nostri precedenti blocchi.

Kate ci ha detto che ci saranno dei "giri" dedicati alla decorazione, così per uno dei pezzi ho deciso di lasciare spazio per abbellimenti futuri, invece per l'altro pezzo ho usato colori diversi dai precedenti ed una tecnica che non avevo mai provato, il seminole.

Il risultato non mi dispiace, ma bisogna ammettere che il mio seminole ha bisogno di molta pratica!

Adesso non mi resta che unire i pezzi (e sono taaanti: ogni esagono è diviso in due, in tutto sono circa 336 pezzi) con molta molta attenzione per non perdere il disegno generale... poi dovrò decidere come fare la quiltatura, ma ci penserò con l'anno nuovo!

And, ta-daaa, my kaleidoscope quilt!
Now I have to sew the pieces (and there are a lot of them: 336 half-hexagons!) being very very careful (I can't afford to lost the general pattern I studied so much to achieve!), and then I will decide about the quilting... but this will be a work for the new year!

Ora mi manca da tagliare a triangoli equilateri solo una striscia, che poi assemblerò a semi-esagoni ed inserirò nel disegno generale, cercando di armonizzare i colori il più possibile

La mia passione sono i libri: adoro leggere!
Di recente mi sono convertita alla lettura digitale, con un bellissimo e-reader del quale sono pienamente soddisfatta (grazie Simplicissimus!), ma per i libri di patchwork, ovviamente è ancora la versione cartacea ad appassionarmi.
E così, dopo aver riscoperto l'applique, non potevo non prendere alcuni libri sull'argomento. Ecco i miei ultimi acquisti:

Non sono un'appassionata di applique...

Non ero un'appassionata di applique...

Qualcuno, però, di recente, mi ha fatto cambiare idea... La mia amica Francesca, vulcanica organizzatrice di Quilting Day e di pullmann per Cervia (Quilting Week-End di Quiltitalia) ha gentilmente passato una domenica pomeriggio con la mia amica Marina e me insegnandoci l'applique a macchina.

Stay at Home Round Robin!

Usually I'm an early bird... the sort of person who don't mind about being up early in the morning for a walk in the mountains, a trip to an exciting new fabric shop ;-) or just to say "Hello" to my husband heading to airport at 4 a.m. and I'm almost ever on time with my appointments... almost...

Kate started in July (yes... I'm "just" 4 months late...) a Stay at Home Round Robin: every person works on a Round Robin, but the quilt don't trip around the group... it just stay at home. It seems a happy mix between a RoundRobin and a Mistery, and I has been fascinated by the moment I see it... but I saw it a week ago and there was already 4 round done! I thought I was too late, but then...

Yesterday in Italy was a very rainy day (well, in Northern Italy was... in South-Center was sunny, lucky they!), a perfect day for a patchwork session, so I decided to give a try and started to work on the Stay-at-Home-RR...

Kate has been so kind to accept my submission and now... here I am!

First Round: a 6" square (finished). I played with triangles and strips, the strips ending outside the border of the block:

Second Round: add a piece 4"x6" at the left- (or right- if you prefer) side of the first block. (Yes it has been simpler to know in advance how the development will be... forgive me...)

Third Round: add a piece 10"x3" (finished size) at the top. This time I played with circles.

Fourth Round (yeufh! I'm catching up at last!): add a piece 3x9 at the left or right of the prevoius blocks. I decided for Flying Geese: the last one I made was ages ago! As you can see, I'm having some problems with measurement, because I'm using my brand new ruler in inches... and just I can't figure out very well how to add the 1/4 for the seams... It seems so strange working with quarter and not with millimeters!

Well, that's all, for now... I'm already looking forward for the next instruction: it will be real fun!

Zorra has announced here the 5th World Bread Day and I'm very proud to partecipate (thank you Cindy for let me know ;) ).

And this is my little contribution for you all:

BAGUETTE con AUTOLISI

(qui trovate l'originale in italiano, thanks to Adriano Continisio: Adriano, you're my baking hero :) )

Ingredients:

250 g Manitoba flour (W300*)

250 g white flour (W250*)

315/350 g water

10 g salt

5 g yeast

Instructions:

At 4 p.m.

Knead 150 g of the Manitoba flour with 95 g of water in the mixer (a "heavy-duty" one, such a kenwood or a kitchenaid or similar) a vel. 1 for 5 minutes. Cover the dough.

Prepare a "biga": mix 100 g of the manitoba flour, 45 g of water, 1 g of yeast.

Let the two doughs overnight at 18°C (64°F).

At 8 a.m.

Dissolve 4 g of yeast into 100 g of lightly warm water, add 100 g of flour, cover and let rise at 26°C (79°F) for 1 1/2 hour.

Add the remaining flour, 75 g of water and mix at vel. 1 with the "leaf" (see the pics below), add the salt.

After some minutes, insert the "biga", at big chunks, and short after the other dough.

When you have a good dough, insert the hook and mix at vel. 1,5 for 3-5 minutes (until the dough will be smooth and shiny). Now, if you think necessary, insert the rest of the water (35 g), slowly.

Turn the dough on a floured surface and knead it for a couple of minutes. Cover for 45 minutes.

Fold the dough in three, as a envelope:

and let stand another 45 minutes.

Divide the dough in three and cover with a bowl (or a plastic film), let stand for 15 minutes.

Flatten very very gently the doughs in a square and then roll them up as you can see in the pics:

Form the baguette and let them rest in a floured dishcloth until doubled (60-90 minutes).

Heat the oven at 220°C with a bowl of water inside , slice the surface of the baguette with a blade and put them in the oven.

After 10 minutes remove the water and lower the temperature at 180°C

Cook for 15 minutes more and let them cool before serving.

Ne avevo molto sentito parlare nei blog di patchwork e così mi sono incuriosita e l'ho preso (assieme ad altri 3 libri, che però devono ancora arrivare).
Una sola parola: COMPRATELO!
È davvero molto bello, con idee innovative e splendidi progetti!
Mi è venuta voglia di iniziare un nuovo progetto, ma davvero non posso: devo finire il quilt di Kate, prima!!!

I read a lot about this book in the blogosphere and so curiosity took the lead and here I am... I have just two words: BUY IT!
It is really beautiful, with interesting tips and gorgeous projects.
I absolutely "need" to make a quilt from this book, but I honestly can't: I have so many projects already and, BTW, the Kate-quilt awaits!

Vale a dire: a volte ritornano!

Eccomi di nuovo qui, dopo mesi di assenza, non solo dal mio blog, ma anche da patchwork e hobby vari... sono una discontinua, tanto vale che mi ci rassegni!

Complici sia le soleggiate giornate di questi giorni (e quando settembre decide di essere incantevole, è il migliore dei mesi...) sia il mio computer nuovo! Un fantastico Vaio che finalmente non va più a pedali, poverino, l'altro era davvero troppo lento!

Eccomi qua... cominciavo a darmi per dispersa anch'io!
Approfitto di una giornata uggiosissima, in cui spendere a casa la mia ultima giornata a casa dopo una noiosa influenza... quel giorno in cui si sta ormai abbastanza bene per non avere il fiatone passando dal letto alla cucina, si vede ormai prossimo il ritorno ai ritmi quotidiani e si cominciano a fare progetti (e a organizzare lo smaltimento degli arretrati in ufficio!)
Ne approfitto allora per farvi vedere il mio attesissimo (da me, ovviamente) Round Robin, che, iniziato a fine febbraio 2009, è tornato a casa solo ad aprile 2010. Evidentemente l'ultima compagna di viaggio non si sentiva sufficientemente ispirata da lui, poverino...
Eccolo, ovviamente lo trovo bellissimo e sono davvero grata alle mie compagne di viaggio che si sono tanto impegnate per me... GRAZIE di cuore a tutte!

Un "mistery" senza mistero - a mistery without mistery!

Mi sono iscritta all'associazione di patchwork della mia città (vicino...), La Zampa dell'Orso, dove peraltro ho fatto il mio primo corso di patchwork e tra i progetti annuali è previsto un "mistery" che quest'anno, per amor di varietà, non è affatto misterioso!

Infatti il mistery prevede una "mum" che distribuisca ai partecipanti, solitamente con cadenza mensile, dei blocchi da fare, i quali vengono di volta in volta "svelati" durante la riunione di distribuzione. Solo alla fine si comporrà il disegno finale (ovviamente informazioni come le dimensioni o suggerimenti sulle scelte-colore vengono date all'inizio...).

Il mistery dell'anno scorso aveva dato luogo a quilt molto simili tra loro, anche come scelta colore e la cosa di per sè non sarebbe un problema, se non fosse che questi quilt poi sono stati esposti, come ogni anno, alla fiera IdeaNatale (che si tiene a Udine in novembre, non perdetela!) e l'insieme, come dire, risultava un po' noioso, così quest'anno sono stati proposti degli schemi vari e ogni socia ne ha scelto uno.

Io ho scelto lo schema che vedete nella foto sopra, di Lori Smith: un misto di blocchi cuciti ed applicati molto "folk". Io non amo l'applique, a dire il vero... anche perchè ho amiche che sono delle vere maghe dell'applique (vero Francesca e Marina??!!), ma mi sembrava giusto impegnarmici comunque, perchè è una parte importante del patchwork e non può essere tralasciato (secondo me...)... adesso "tocca" mettersi al lavoro!!

Il Patchwork Caffè quest'anno organizza un favoloso RoundRobin!!!

Il Round Robin ha origini antiche nel mondo del patchwork ed è una forma di lavoro di gruppo che cementa molto i legami tra le/i partecipanti. Funziona nel seguente modo:

Ogni persona cuce un blocco di dimensioni definite (nel nostro caso: 34 cm) e poi lo passa alla persona successiva a lei nella lista, che si occupa di attaccare un primo bordo, passandolo poi alla persona dopo di lei nella lista, che attacca il secondo bordo e così via, in una specie di catena per cui ognuno vede il suo blocco solo quando tutte le altre hanno contribuito con il loro bordo...

Un bellissimo lavoro corale!

Quest'anno lo facciamo anche noi del Patchwork Caffè e sono emozionatissima: il mio primo round robin!

Il mio gruppo è formato da: Gemma, Giulia, Alessandra e Francesca (oltre a me, s'intende...) ed il primo giro è previsto per fine febbraio... sarà anche l'unico che vi potrò mostrare prima della fine, perchè ovviamente il bello sta nella sorpresa!

Abbiamo anche un logo: una sorridente lumachina che vuole ricordarci che è solo un bel gioco e che nessuno ci corre dietro!

Che si mangia, oggi? - What's for lunch, today?

Oggi… pesce!

Marito e creatura sono in montagna a sciare per il week-end ed io sono quindi libera di leggere, quiltare, fare niente… ogni tanto ci vuole, no?
E così, visto che il resto della famiglia non ama il pesce, ho deciso di regalarmi un pranzo “marino”!

Ho cominciato con un antipasto di capesante all’olio di vaniglia… una ricetta di José Marechal, alla quale ho fatto un’unica modifica, cucinando le capesante, invece di farle solo marinare… Semplicissime, ma molto chic!
Come primo piatto ho scelto dei semplici spaghetti con le vongole… la ricetta viene da quella gran cuoca che è la mia mamma, in più è veneziana d.o.c., che non guasta!
Poi mi sono fatta del pesce caramellato al limone, ricetta di Donna Hay: un esperimento riuscitissimo, che ho abbinato ad una semplice insalata verde, la iceberg (o brasiliana): fresca e croccante si sposa bene con il morbido e vellutato del pesce.
Per “ripulire la bocca”, ho deciso di terminare il mio pranzo con un dolce al limone ed ho voluto provare i pudding al limone, ancora di Donna Hay: una semplice crema al forno cotta in porzioni singole.

Beviamoci sù
Non sono un’intenditrice di vini, ma ho la fortuna di avere alcune grandi bottiglie in cantina e per l’occasione mi sono stappata un “biancosesto” 2006 de La Tunella… Davvero buono…:P

LE RICETTE
Antipasto:
Capesante all’olio di vaniglia

Questa mattina, appena alzata (oh bella ciao, bella ciao… ooops…) ho messo in infusione olio e vaniglia… viene meglio con la bacca, ma mi sono accorta di non averne, così ho usato della vanillina…
Poco prima di mettermi in tavola, ho scottato le capesante in padella, poi le ho irrorate con l’olio alla vaniglia e le ho lasciate riposare alcuni minuti.

Primo piatto

Spaghettini alle vongole

Che dire? Si puliscono bene le vongole, si fanno aprire a fuoco vivace, poi si cuociono gli spaghettini al dente e si fanno saltare in padella con le vongole (io preferisco sgusciarle prima), abbondante prezzemolo ed una noce di burro…

Secondo piatto
Pesce caramellato al limone

Si cucina in olio caldo il pesce a tocchetti fino a doratura (circa 1 minuto).

Nel frattempo mescolare 1 cucchiaio abbondante di zucchero di canna, 1 cucchiaio di succo di limone, 1 cucchiaio di salsa di soia, ½ cucchiaino di paprika dolce, poi versare la salsa sul pesce e cucinarlo fino a cottura, girandolo una volta (circa 4 minuti). La salsa dovrà essere ormai sciropposa. Servire con un’insalata verde e la salsa.

Dolce:
Pudding al limone

Ingredienti x 6 (ho diviso le dosi):
90 g burro morbido
335 g zucchero
375 ml latte
3 uova
125 ml succo di limone
65 g farina
1 cucchiaino di lievito in polvere

Scaldate il forno a 180°.
Mettete tutti gli ingredienti nel mixer e frullate fino ad ottenere una crema omogenea.
Mettete in cocottine da forno imburrate e fate cuocere fino a doratura (20-25 minuti).
Servite caldi.

Today… fish!

DH and DD are going skiing, so I’m free for the week-end: I can read, quilt or doing nothing at all… sometimes it is nice, ins’it?
So I decided to cook an “all-fish” lunch, just for me (the rest of the family doesn’t like fish very much…)
I began with an appetizer: St.Jacques in vanilla oil, a recipe by José Marechal, I just made a change, cooking the st.jacques before marinate them with the oil. Very simple, but very chic!
As first course I choose “Spaghetti con le vongole”, a typical Venetian recipe… it came from my Venetian mother… a guarantee!
As second course caramelized fish with lemon, a Donna Hay recipe I’d never tried: very good!
The fish was served with a green salad: fresh and crispy it has been the perfect companion for the velvety texture of the fish.

To "clean the mouth" from the fish, I choose a lemon pudding, another Donna Hay recipe.

AND THE WINE?

I'm not a wine expert, but I'm lucky and I have some great wines in my cellar, so I've done a gift to myself, opening a "biancosesto" by La Tunella. Great!

Appetizer:
Saint Jacques with vanilla oil

Early this morning I made an infusion with extra-virgin olive oil and the vanilla.
At lunch, I cooked briefly the st. Jacques in a pan, then I poured the oil over. I left to rest a pair of minutes.

First course
Spaghetti con le vongole
Even more simple… after cleaning the clams, let them open on a pan at high temperature.
Cook the spaghetti “al dente”, then add them to the clams in the pan, with a lot of parsley and a tablespoon of butter

Second course
Caramelized fish with lemon

Cook the fish (cut in pieces) in extra-virgin oil until golden (about a minute). In the meanwhile, mix 1 tablespoon of brown sugar, 1 tblspoon of lemon juice, 1 tblsp o soy sauce, ½ teaspoon paprika
Pour the mixture over the fish and let cook until done, about 4 minute, turning the fish one time.
Serve the fish, with the caramelized sauce, with a green salad.

Dessert:
Lemon Pudding

Ingredients (serves 6.)
90 g butter, softened
335 g sugar
375 ml milk
3 eggs
125 ml lemon juice
65 g all-purpose flour
1 teaspoon baking powder

Pre-heat the oven to 180°C.
Mix the ingredients in a mixer, whisking until well combined.
Pour the cream in buttered cocotte and cook until golden (20-25 minutes).
Serve hot.

My first international swap it is gone!
A bit late (the deadline was November the 10th...), but yesterday at last I mailed my little work to my partner... It has gone abroad, but this don't say much, because I was the only Italian swapper, this time at the "Another Little Quilt Swap 2" hosted by Kate in a blog ad hoc.
I really hope it will be appreciate... I was so nervous during this little trip between blocks and fabrics and blogs to find ideas...
At last I decided for a Feathered Star... the pattern and the colours are not casuals, but I can't say more...

Il mio primo scambio internazionale è andato!
Con un po' di ritardo (la scadenza era il 10 novembre...), ma alla fine ieri ho spedito il mio piccolo lavoro a chi di dovere... E' andato all'estero, ma questo non vuol dire molto, perchè ero l'unica italiana per questa volta all' "Another Little Quilt swap 2" ospitato da Kate in un blog ad hoc.
Spero davvero che sarà apprezzato... ero così nervosa durante questo piccolo viaggio tra blocchi e stoffe e blog per cercare idee...
Alla fine ho deciso per una Stella Piumata... il motivo ed i colori non sono casuali, ma non posso dire di più senza dire troppo...

Ecco cosa ho preparato l'anno scorso per suocera e cognate... un progetto trovato su un vecchio Magic Patch e che si è prestato benissimo per fare da accompagnamento a qualche vasetto di conserve fatte in casa: gelatina di vino, marmellata di susine, dado vegetale e caramello... inutile dire che sono stati molto apprezzati!

I made those gifts last christmas for my mother-in-law and my two sisters-in-law... a pattern found in a old MagicPatch, a very good companion for some home-made delicacy: plum jam, caramel, wine jelly,.. yum yum! It has been very appreciate!!!

Ecco qua!

La mia migliore amica è andata a convivere... e dopo anni di tentennamenti, l'ha fatto in quattro e quattr'otto, così non ho avuto il tempo di prepararmi...

Allora ho deciso di prepararle una coperta per il suo compleanno a marzo... Ho scelto i meravigliosi "pieced-Baltimora" di Pam Bono, per la precisione "Out-of-the-Darkness", visto che lei adora il nero...

Ecco i primi 3 quadrati...

In alto "Orange Blossom", in basso a sinistra "Morning Glory", in basso a destra "Patriotism Eternal Bloom".

Sono fatti con una variante del metodo di cucitura che si usa per il blocco "Palla di neve", cioè il quadrato nell'angolo e i risultati sono spettacolari, pur senza essere particolarmente difficili. I blocchi sono 45x45 cm...

At last!

No, I'm not ready to ship my little work of patience to my partner, but I'm on the right road, at last!

I choose a Feathered Star in blue, because I like this blue and yellow fabric soooo much... I really hope my partner would like it, too!

It is machine-pieced and hand-quilted... well, I'm doing the quilting right in this days (I choose to quilt into-the-ditch). I think I will ship to my partner at the end of the month... ffffiuu! The deadline is the 12th of November: I'll be just in time!

Finalmente! No, non sono ancora pronta a spedire il mio lavoro al partner scelto dalla fortuna (sotto forma di Kate, l'organizzatrice di questo secondo ALQS), ma almeno sono sulla giusta strada, alla fine!

Ho scelto di fare una Stella Piumata in blu, perché mi piace tantissimo questa stoffa... spero piaccia anche a chi lo riceverà!

E' stato cucito a macchina e quiltato a mano... beh, lo sto quiltando proprio in questi giorni (ho scelto di quiltarlo "in cucitura"). Penso di riuscire a spedirlo entro la fine del mese.... fffiuuuu! La scadenza è il 12 novembre, per cui sarò giusto in tempo!

La ricetta è davvero super-classica...

Sostanzialmente qualsiasi ricetta va bene, basta che facciate metà dose con la farina di semola di grano duro e l'altra metà dose con una farina integrale (integrale, farro,..)

Il "barba-trucco" consiste nello stendere i 2 tipi di pasta dopo una prima lievitazione da 1 ora e sovrapporli. Poi si arrotolano assieme e si lasciano lievitare ancora per un'ora.

Il risultato, dopo la cottura (a 200° per 40 minuti) sarà il seguente:

Ingredienti:

PARTE BIANCA

200 g di farina di semola di grano duro;

100 g di farina O (meglio manitoba);

120 g di acqua (iniziate con 100 g e poi aumentate fino ad ottenere la consistenza voluta dell'impasto)

1/4 di cubetto di lievito (panetto da 25 g)

sale, zucchero, olio

PARTE SCURA

250 g di farina integrale;

50 g di farina manitoba;

... il resto è come sopra...

Sfida dell'Estate

Quest'anno ho partecipato anche alla Sfida dell'Estate del negozio Home Sweet Home di Concordia Sagittaria...

Ora che tutto è finito posso mostrarvi la mia creazione!

La sfida consisteva nell'inventare un quilt partendo da 2 pezzetti di stoffa e 1 bottone...

Ho usato le stoffe ed il bottone per fare il vaso in cui crescono queste rose di seta in origami e ho quiltato il primo verso di una delle mie poesie preferite "La rosa bianca" di Attilio Bertolucci.

I made a quilt for the Summer Challenge of Home Sweet Home, a quilt shop in Concordia Sagittaria (near Venice)... Now the show is gone, so I can show you my creation!

We had 2 pieces of fabric and a button for creating a little quilt.

With the fabrics and the button I made a pot for some origami roses in silk, and I quilted the first verse of my favourite poem "La rosa bianca" (The White Rose) by Attilio Bertolucci.

I will pick up for you

the last rose in the garden

flourishing in the first fogs.

have visited her since yesterday

I'm terribly late...

I'm so late I really don't know what to say...

AND I haven't any good excuse for it...

Daring Bakers September Challenge was due just a couple of days ago... but I completely forgotten!

Forgotten the challenge? Oh no, not indeed! I made dutyfully my lavash cracker and a yummy hummus, that, in my opinion, was just the right companion to them... but I completely forget to take pics!!!! I had a dinner, I made them as appetizers and they were gone before I realized the fact: I haven't got a single picture!!!

So now?

So now I can just say "Sorry" to my fellows and feeling a little guilty... but they were delicious and I can say that the hummus was indeed the best choice I could made!
Next time I will try my pasta-maker (the one for lasagne), to made them really thin, because if they had a fault, was that they weren't very thin.

Gli UFO in casa mia! – UFO are between us!

Ho scoperto di recente che gli UFO non solo esistono, ma sono nelle nostre case… o perlomeno nelle case di ogni brava quilter che si rispetti…
UFO, infatti, sta per UnFinished Object, Oggetto Non Terminato…
Alcuni vanno ancora oltre nella suddivisione distinguendoli dai WIP, ovvero Work In Progress, perché gli UFO solitamente sono oggetti lasciati a metà da “secoli”… insomma quella sorta di progetti nei quali ci imbattiamo rimettendo in ordine a Primavera e che ci fanno dire:

“Ehi, non ci posso credere! Ecco dov’era finita la coperta per la culla di Alessandro”
(… e intanto il “piccolo” Alessandro quest’anno fa la maturità…)

Ho deciso di fare anch’io il conto dei miei UFO e devo dire che non è andata male… per una che fa patchwork da nemmeno 2 anni…

una mezza pineapple star, che doveva diventare un pannello… poi una borsa… poi il retro di un gilet… poi il davanti di una felpa… e nel frattempo ho finito le stoffe che mi servivano e rimarrà a metà… a meno che non mi faccia venire un’idea geniale… mmmh, difficile…
la trapuntina da divano fatta al mio secondo corso di patchwork, alla quale manca “solo” la quiltatura, come dire metà del lavoro…
alcuni blocchi sparsi della suddetta coperta, che dovevano diventare cuscini o federe e che invece sono ancora in un cassetto… d’altra parte che federe faccio se non c’è nemmeno la trapuntina??!
un kit per un pannello con i gatti, completo di stoffe, bellissimo, adorabile… insomma, mai iniziato neanche quello…
un kit per un pannello sulle stagioni… in applique… che io non amo affatto… non chiedetemi perché l’ho comprato…
il Dear Jane… che tecnicamente sarebbe un WIP, ma è un lavoro talmente enorme che non credo riuscirò mai a finirlo… peraltro mi sta anche venendo voglia di fare tutti i blocchi a mano… così è proprio un UFO garantito!

Questi UFO restano ben distinti dai WIP, che invece sono:

il mio pannello di matrimonio
il quilt di matrimono di Caterina (AUGURIIIIIII!!!)
la coperta per mia zia, da fare per Natale (no, non ho specificato l’anno…)
la copertina per la culla del figlio di una mia amica… (no, non si chiama Alessandro e non fa la maturità quest’anno: il cucciolo è nato 4 mesi fa: sono ancora in tempo!)

Non male, eh?
Per non parlare dei miei, in qualche caso ambiziosissimi (si sogna in grande, da queste parti!), progetti futuri, che sono:

1. il quilt per ALQS entro novembre;
2. i blocchi per Quilts4Leukaemia entro Natale;
3. un round robin con le ragazze di Patchwork Caffè (Iniziamo nel 2009: non vedo l’ora! E’ il mio primo RR!)
4. quilt per i nipoti (5!!!)
5. il mio quilt matrimoniale (non ho ancora risolto il problema della gatta che dorme sopra il letto, facendosi le unghie sopra… sarà per quello che non l’ho ancora iniziato??!!)
6. il mistery quilt del sito ElectricQuilt (la mia copia del software è in viaggio verso il mio computer!)

I found out recently that UFO not only does exist, but they are actually in our houses… or, at last, in every quilter’s house!
In fact UFO is an UnFinished Object, which is very different from a WIP, Work In Progress, because an UFO is more likely to remain unfinished… they are that sort of thing you found during the annual big clean-up, screaming:

(… and “little” John in the meanwhile has already finished college…)

So here comes a list of my UFO:

half a pineapple star… for a wall hanging, then for a bag, then for the back of a waistcoat, then for the front of a jumper… and then I finished the fabrics I need and so it will be a half-star forever (unless I will have a really bright idea, but it seems to me very difficult!!!)
the lap-quilt made during my second course, with “just” the quilting lacking…
some spare blocks of the lap quilt, for the complementary pillows, but why am I supposed to make the pillows without the quilt??!
a wall hanging-kit for cat-lover (I am indeed a cat lover!), really really pretty… but never begun…
a wall hanging pattern in appliqué… I don’t like appliqué very much… it is a beautiful technique, but not really my technique… I actually don’t know why I bought it…
my Dear Baby Jane… which technically it is a WIP, but it is so huge a work I really don’t think I’m going to finish it…

And my WIP are:

my wedding wall hanging (almost finished… almost…)
a wedding quilt for my best friend, Caterina (2 blocks done, 10 to go… groan…)
a quilt for my aunt Lucia (a Christmas gift… but I haven’t say for which year!);
a crab quilt for a friend’s son (no, he’s not named John and he isn’t at college… actually he is just 4 months old: I’m on time!)

Not bad, isn’t it?

And, at last, my future projects, some very real, some perhaps just dreams:

the quilt for my partner at ALQS 2 (very real!);
blocks for Quilts4Leukaemia (very, very real!);
a round robin with the girls of my patchwork forum (Wow! We will begin in 2009: I can’t wait, it’s my first RR!);
quilts for my 5 nephews (5!!! Oh my!)
my wedding quilt (but I’m trying to figure out how to solve the problem of my cat, who sleeps in my bed and has very sharp “claws”…)
the mistery quilt in the EQ6 site (my copy of the software is on its trip towards my computer!!)

Ricetta semplicissima e buonissima, un abbinamento che è certamente tra i preferiti di ogni tempo ;) , trovata sul libro Torte Dolci e Salate, di Delphine de Montalier, Guido Tommasi editore.

Ingredienti:
un panetto di pasta per pizza; 200 g di formaggio spalmabile (tipo philadelphia); 2 cucchiai di panna fresca; 150 g di pancetta affumicata a cubetti (quella per l’amatriciana, per intenderci); 150 g di cipolle affettate, olio, sale, pepe.

Scaldate il forno a 220°.
Fate andare le cipolle sul fuoco basso con un goccio d’acqua, in modo da ammorbidirle e addolcirle (nulla vieta, però, se vi piace, di lasciarle crude)*.
Fate un impasto cremoso mescolando il formaggio, la panna, sale a gusto (non dimenticate che la pancetta è già salata di suo) e un paio di cucchiai d’olio.
Unite alla crema le cipolle e la pancetta. Stendete la pasta da pizza su una teglia e conditela con la preparazione di formaggio, cipolle e pancetta.
Fatela cuocere per 20 minuti in forno e pepate allegramente dopo sfornata.

* Una via di mezzo può essere, avendo tempo, quella di lasciarle a bagno in acqua ghiacciata per almeno mezz’ora.

Un programma e una sfida - A software and a challenge

Lunedì ho comprato Electric Quilt 6, un software di design per quiltiste e adesso sto aspettando il pacco dagli Stati Uniti in grande trepidazione! A sentire i commenti sui vari blog, dovrebbe dare una bella spinta alle mie (per ora povere) abilità… il sito è molto carino, con dei virtual round robin, un mistery in progress (e uno molto bello già finito)…
Mio marito (di solito molto supportivo, ma ultimamente forse un po’ stufo di toast e insalate a causa delle varie sfide-scambi-riffe a cui sto partecipando…), dopo aver letto delle decinaia e decinaia di blocchi contenuti nel software mi ha detto speranzoso “Allora non comprerai più libri di patchwork?!”
… Ingenuo…
Comunque ho deciso che la mia prima prova sarà il lavoro che devo fare per ALQS2 (Another Little Quilts Swap 2), uno scambio a cui mi sono avventatamente iscritta senza immaginare che sarebbe stata una sfida al di sopra delle mie possibilità! Ho visto i lavori delle altre iscritte e… wow! Quanto sono brave! Fateci un giro, per rifarvi gli occhi!
Così, essendo l’unica italiana iscritta, mi sento in dovere di fare un bel lavoro per non far sfigurare il mio Paese… col risultato che ho già cambiato 10 volte progetto, ne ho fatto uno (scartato), sono a metà di un altro (che scarterò pure…) ed ora mi affido a EQ6… chissà che non sia renda davvero utile da subito!

Monday I bought from Internet Electric Quilt 6, a software of quilt design and now I’m waiting it with great anticipation mail from the States! I read some opinions in the web and it seems a very powerful program, a sort of kick-off for my poor quilting ability, I hope!
The EQ site is a very good one, with some virtual round robins and even a mistery quilt in progress (and another one, very pretty, already finished)!
My DH (usually very supportive, but lately perhaps a little tired of ready-meals because of my patch-projects…), after reading of the many, many blocks in the software, said hopeful: “At last you will not buy others patchwork books, from now then?!”… Oh my! How naïf!!!
By the way, I decided to try immediately the software with the ALQS2 quilt that is due the 10th of November: I subscribed for this swap some weeks ago, but after seeing the beautiful piece-of-art of my fellows swappers I started to feel very awkward about my possibilities… Go and take a look at their blogs and you will know what I mean!
Moreover, being the only Italian quilter in this swap, I feel that I have some responsibility in order to make a good impression for my Country… I already have changed subject dozen of times, actually made one (discarded), I’m half way another (that I will discard, too) and now I’m looking forward to receive my copy of EQ6… Who knows it will be useful by the start?!

Daring Bakers come back in France: éclairs au chocolat!

It is three month since I become a DB and that’s the second French recipe we cook…
Being Italian I could be a little bit jealous… but how can I possibly be jealous of the éclairs? I can just be grateful Someone invented them! And I have indeed many faults, but not these: I am a grateful person… so, thanks a lot to the inventor of the recipe and thanks a lot to MeetaK and Tony, to such a delightful choice!!!

As usual, below you can find the recipe, but go straight to the Daring Bakers blogroll, to see the beauties of my fellows DBs!

For me, I decided not to glaze them, even if I did the glaze (mmmh and it was delicious...): they seemed already too sweet to me…

Pierre Hermé’s Chocolate Éclairs
Recipe from Chocolate Desserts by Pierre Hermé (makes 20-24 Éclairs)

• Cream Puff Dough (see below for recipe), fresh and still warm
1) Preheat your oven to 375 degrees F (190 degrees C). Divide the oven into thirds bypositioning the racks in the upper and lower half of the oven. Line two baking sheets withwaxed or parchment paper.
2) Fill a large pastry bag fitted with a 2/3 (2cm) plain tip nozzle with the warm cream puff dough.Pipe the dough onto the baking sheets in long, 4 to 41/2 inches (about 11 cm) chubby fingers.
Leave about 2 inches (5 cm) space in between each dough strip to allow them room to puff. The dough should give you enough to pipe 20-24 éclairs.
3) Slide both the baking sheets into the oven and bake for 7 minutes. After the 7 minutes, slip the handle of a wooden spoon into the door to keep in ajar. When the éclairs have been in the oven for a total of 12 minutes, rotate the sheets top to bottom and front to back. Continue baking for a further 8 minutes or until the éclairs are puffed, golden and firm. The total baking time should be approximately 20 minutes.

Notes:
1) The éclairs can be kept in a cool, dry place for several hours before filling.

Assembling the éclairs:
• Chocolate glaze (see below for recipe)
• Chocolate pastry cream (see below for recipe)
1) Slice the éclairs horizontally, using a serrated knife and a gently sawing motion. Set aside the bottoms and place the tops on a rack over a piece of parchment paper.
2) The glaze should be barely warm to the touch (between 95 – 104 degrees F or 35 – 40 degrees C, as measured on an instant read thermometer). Spread the glaze over the tops ofthe éclairs using a metal icing spatula. Allow the tops to set and in the meantime fill the bottoms with the pastry cream.
3) Pipe or spoon the pastry cream into the bottoms of the éclairs. Make sure you fill the bottoms with enough cream to mound above the pastry. Place the glazed tops onto the pastry cream and wriggle gently to settle them.

Notes:
1) If you have chilled your chocolate glaze, reheat by placing it in a bowl over simmering water, stirring it gently with a wooden spoon. Do not stir too vigorously as you do not want to create bubbles.
2) The éclairs should be served as soon as they have been filled.

Pierre Hermé’s Cream Puff Dough
Recipe from Chocolate Desserts by Pierre Hermé (makes 20-24 Éclairs)
• ½ cup (125g) whole milk
• ½ cup (125g) water
• 1 stick (4 ounces; 115g) unsalted butter, cut into 8 pieces
• ¼ teaspoon sugar
• ¼ teaspoon salt
• 1 cup (140g) all-purpose flour
• 5 large eggs, at room temperature

1) In a heavy bottomed medium saucepan, bring the milk, water, butter, sugar and salt to the boil.
2) Once the mixture is at a rolling boil, add all of the flour at once, reduce the heat to medium and start to stir the mixture vigorously with a wooden spoon. The dough comes together very quickly. Do not worry if a slight crust forms at the bottom of the pan, it’s supposed to. You need to carry on stirring for a further 2-3 minutes to dry the dough. After this time the doughwill be very soft and smooth.
3) Transfer the dough into a bowl of a mixer fitted with the paddle attachment, or using your handmixer or if you still have the energy, continue by hand. Add the eggs one at a time, beating after each egg has been added to incorporate it into the dough. You will notice that after you have added the first egg, the dough will separate, once again do not worry. As you keep working the dough, it will come back all together again by the time you have added the third egg. In the end the dough should be thick and shiny and when lifted itshould fall back into the bowl in a ribbon.
4) The dough should be still warm. It is now ready to be used for the éclairs as directed above.

Notes:
1) Once the dough is made you need to shape it immediately.
2) You can pipe the dough and the freeze it. Simply pipe the dough onto parchment-lined baking sheets and slide the sheets into the freezer. Once the dough is completely frozen, transfer the piped shapes into freezer bags. They can be kept in the freezer for up to a month.

Chocolate Pastry Cream Recipe from Chocolate Desserts by Pierre Hermé
• 2 cups (500g) whole milk
• 4 large egg yolks
• 6 tbsp (75g) sugar
• 3 tablespoons cornstarch, sifted
• 7 oz (200g) bittersweet chocolate, preferably Velrhona Guanaja, melted
• 2½ tbsp (1¼ oz: 40g) unsalted butter, at room temperature

1) In a small saucepan, bring the milk to a boil. In the meantime, combine the yolks, sugar and cornstarch together and whisk in a heavy-bottomed saucepan.
2) Once the milk has reached a boil, temper the yolks by whisking a couple spoonfuls of the hot milk into the yolk mixture. Continue whisking and slowly pour the rest of the milk into the tempered yolk mixture.
3) Strain the mixture back into the saucepan to remove any egg that may have scrambled. Place the pan over medium heat and whisk vigorously (without stop) until the mixture returns to a boil. Keep whisking vigorously for 1 to 2 more minutes (still over medium heat).
Stir in the melted chocolate and then remove the pan from the heat.
4) Scrape the pastry cream into a small bowl and set it in an ice-water bath to stop the cooking process. Make sure to continue stirring the mixture at this point so that it remains smooth.
5) Once the cream has reached a temperature of 140 F (ca 60°C) remove from the ice-water bath and stir in the butter in three or four installments. Return the cream to the ice-water bath to continue cooling, stirring occasionally, until it has completely cooled. The cream is now ready to use or store in the fridge.

Notes:
1) The pastry cream can be made 2-3 days in advance and stored in the refrigerator.
2) In order to avoid a skin forming on the pastry cream, cover with plastic wrap pressed onto the cream.
3) Tempering the eggs raises the temperature of the eggs slowly so that they do not scramble.

Chocolate Glaze Recipe from Chocolate Desserts by Pierre Hermé (makes 1 cup or 300g)
• 1/3 cup (80g) heavy cream
• 3½ oz (100g) bittersweet chocolate, finely chopped
• 4 tsp (20 g) unsalted butter, cut into 4 pieces, at room temperature
• 7 tbsp (110 g) Chocolate Sauce (recipe below), warm or at room temperature

1)In a small saucepan, bring the heavy cream to a boil. Remove from the heat and slowly begin to add the chocolate, stirring with a wooden spoon or spatula.
2) Stirring gently, stir in the butter, piece by piece followed by the chocolate sauce.

Notes:
1) If the chocolate glaze is too cool (i.e. not liquid enough) you may heat it briefly in the microwave or over a double boiler. A double boiler is basically a bowl sitting over (not touching) simmering water.
2) It is best to glaze the eclairs after the glaze is made, but if you are pressed for time, you can make the glaze a couple days ahead of time, store it in the fridge and bring it up to the proper temperature (95 to 104 F) when ready to glaze.

Chocolate SauceRecipe from Chocolate Desserts by Pierre Hermé (makes 1½ cups or 525 g)

• 4½ oz (130 g) bittersweet chocolate, finely chopped

• 1 cup (250 g) water

• ½ cup (125 g) crème fraîche, or heavy cream

• 1/3 cup (70 g) sugar

1) Place all the ingredients into a heavy-bottomed saucepan and bring to a boil, making sure to stir constantly. Then reduce the heat to low and continue stirring with a wooden spoon until the sauce thickens.
2) It may take 10-15 minutes for the sauce to thicken, but you will know when it is done when it coats the back of your spoon.

Pioggia Tropicale - Tropical Rain

Questo è il lavoro che ho fatto per la Riffa d'Estate di Patchwork Caffé (lo so, sono un po' in ritardo, la riffa era a giugno...). L'ho tratta dal libro Bargello Quilts di Margie Edie: non sarà la tecnica che mi cambierà la vita, ma è stato comunque molto interessante provarla, anche perchè non avevo mai provato a quiltare mentre cucivo ed è una tecnica con risvolti interessanti...
Questa tovaglietta è finita nelle attente mani di Francesca, che l'ha molto apprezzata (grazie Fra!). Per uno scherzo del destino, a me è arrivato il suo lavoro!!! Una bellissima tovaglietta con un tema molto molto estivo che vi farò vedere non appena riesco a mettere ordine nel mio archivio fotografico!!! State sintonizzati, merita davvero!

This is the result of the Summer Raffle of the Patchwork Caffé forum (I know, I know, it's a bit late: the raffle was in june...)! A bargello- style table mat from the book Bargello Quilts of Margie Edie. It is not the method-of-my-life, but it is well worth a try, because of the particular effects you can achieve! Besides, I've never tried the quilt-as-you-go technique and I found it very interesting...

Ho trovato questa ricettina sul sito di Vegan3000, dove ovviamente le ricette sono "vegan", cioè senza carne, pesce, latticini, uova... Avevo a cena un'amica vegetariana con in più delle intolleranze (glutine e latticini), ma non volevo rinunciare a qualcosa di dolce, così ho deciso di provare questa sorta di budino di mele...
La propongo per il Frutta Party di Cindystar, non all'altezza con le sue meraviglie!
La ricetta è sul sito, ve la riporto per comodità:

Ingredienti:
1/2 litro di succo di mela, 1 pizzico di sale, 1 cucchiaino di agar agar, 1 mela, 1 manciata di uvetta.

Mettere la manciata di uvetta a mollo in un pochino di succo di mele. Lavare accuratamente la mela e tagliarla a triangolini molto piccoli. Scaldare il succo di mela in una pentola, aggiungendoci un pizzico di sale, per esaltare il gusto dolce, ed un cucchiaino raso di agar agar in polvere (l'agar agar è un addensante ricavato da un'alga, che raffreddando diventa gelatinoso, ovviamente non è un derivato animale come le gelatine che si trovano di solito e si può trovare nei negozi di alimentazione naturale). Mescolare accuratamente fino al bollore. A questo punto aggiungere nella pentola di cottura la mela tagliata precedentemente a triangolini e metà dell'uvetta ammollata nel succo di mele. Mescolare, versare nelle coppette e lasciar raffreddare.
Più sano di così!!!

(Poor) ENGLISH, please...

I found this recipe in the Vegan3000-site, a vegan-style site with many interesting recipes (in Italian language). I have a very close friend, who is vegetarian AND she doesn't eat gluten and dairy products, so a dinner with her is a real cooking challenge!
This time I tried this recipe for dessert:

APFELKANTEN

Ingredients:
2 cups apple juice, a pinch of salt, 1 teaspoon agar-agar (a vegetable gelatin, you can find it in Natural Food shops), 1 apple, 1/4 cup currant

Put the raisins in a little applejuice and set aside. Wash accurately the apple and cut it in very little pieces.
Mix well in a saucepan the apple juice with salt and agar-agar powder and bring to a boil. Add the apple and the currants (drained from the juice).
Mix well and let it cool at room temperature, then put in the fridge to set (about 1 1/2 hour).
Good and healthy!!!

Danish Braid: Lost in Translation

La foto non c'entra niente... nemmeno con la Danimarca, visto che risale ad una splendida vacanza bici&barca in Olanda, ma mi piaceva tanto... mi scuso con i danesi: quando riuscirò a visitare il loro bellissimo Paese rimedierò...

Alessandra prima e Giulia poi mi hanno chiesto la traduzione della ricetta della Danish braid, fatta per il Daring Bakers di giugno. Eccole accontentate... spero di non aver fatto pasticci con la traduzione (sono tutt'altro che un'esperta!). Invece per le foto le rimando al post originale, invitando comunque tutti a visitare il blogroll dei Daring Bakers, per vedere le cose meravigliose fatte dagli altri partecipanti!

TRECCIA DANESE

PER l’IMPASTO (DETREMPE)
1 cubetto di lievito di birra (25 g)
125 ml di latte intero
65 g di zucchero
La buccia grattugiata di 1 arancia
¾ di cucchiaino di cardamomo in polvere (facoltativo, io non l'ho messo)
1 e ½ cucchiaino di estratto di vaniglia
I semi di ½ bacca di vaniglia
2 uova grandi
¼ di tazza di succo d’arancia
325 g di farina
1 cucchiaino di sale

PER IL BLOCCO DI BURRO (BEURRAGE)
225 g di burro freddo
25 g di farina

IMPASTO
Mescola lievito e latte nel boccale di un mixer con la frusta a velocità media. Lentamente aggiungi zucchero, la buccia d’arancia, l’estratto di vaniglia, i semi di vaniglia, le uova, il succo d’arancia ed il cardamomo (se lo usi). Mescola bene; cambia la frusta con un gancio per impastare e aggiungi la farina mescolata col sale, 1 tazza alla volta, aumentando la velocità da bassa a media.
Mescola per circa 5 minuti, o comunque finché l’impasto è senza grumi. Potresti dover aggiungere dell’altra farina, se fosse troppo appiccicoso.
Trasferisci la pasta in frigo, coperta con della plastica trasparente, e lascia riposare per 30 minuti.

BEURRAGE
Mescola burro e farina nel mixer e batti a media velocità per circa 1 minuto. Ripulisci le pareti del boccale e fai andare ancora per 1 minuto, o finché sarà senza grumi. Metti da parte a temperatura ambiente.

1. Dopo i 30 minuti, tira fuori l’impasto dal frigo e stendilo su una superficie leggermente infarinata fino ad avere un rettangolo di circa 45x33 cm, spesso mezzo cm abbondante.
Spargi il burro omogeneamente al centro e sul terzo alla tua destra dell’impasto; piega la parte alla tua sinistra verso il centro, coprendo metà del burro e poi prendi il terzo a destra e ripiegalo pure lui verso il centro. Questo è il primo giro.
Non dimenticare assolutamente come è posizionato l’impasto (eventualmente fai una fossetta in basso a sinistra, per ricordarti).
Metti l’impasto in frigo per 30 minuti, coperto da un foglio di plastica.

2. Tira fuori l’impasto e stendilo su una superficie infarinata, fagli fare ¼ di giro in modo che adesso i lati aperti siano alla tua destra e sinistra. Stendi la pasta ancora in un rettangolo da 45x33 cm, stesso spessore e richiudilo a libro come fatto sopra. Questo è il secondo giro. Rimetti in frigo, sempre coperto, per altri 30 minuti.
(la cosa comincerà a essere complicata, per via del burro che vuole scappare, se riuscite a tenderlo dentro la sfogliatura, ovviamente, ne guadagna, per non parlare del fatto che non dovete ripulire il piano di lavoro ogni 3x2!!!)

3. Ripeti la stessa operazione per altre 2 volte (4 giri totali). Mi raccomando ricordati il verso dei giri!

4. Dopo l’ultimo giro l’impasto va tenuto in frigo per almeno 5 ore (meglio se lo prepari il giorno prima e lo fai riposare tutta la notte). A questo punto l’impasto è pronto: si conserva in frigo per 24 ore, oppure in freezer fino ad 1 mese (falla scongelare rimettendola alcune ore in frigo, in modo che scongeli lentamente).

RIPIENO ALLE MELE
4 mele (ottime le fuji), sbucciate e tagliate a pezzettini
95 g di zucchero
Cannella in polvere
Semi di mezza stecca di vaniglia
¼ di tazza di succo di limone
4 cucchiai di burro.

Metti tutti gli ingredienti (la cannella è a piacere, la ricetta originale parla di 1/4 di cucchiaino), tranne il burro, in una ciotola e mescola bene.
Fai sciogliere il burro in una pentola, poi aggiungi l’impasto di mele e fai cuocere finché non saranno morbide e caramellate (10-15 minuti). Lascia raffreddare completamente prima di riempire la treccia.

A questo punto possiamo comporre la nostra treccia:
1. Stendi l’impasto in un rettangolo (io l’ho diviso in 4, perché era tanto e non mi sarebbe stato in forno, nemmeno diviso in 2!) e fai dei tagli obliqui paralleli sul lato lungo, in modo che però rimanga un terzo di impasto intero al centro. Su questo terzo centrale metti il ripieno (alle mele, alle ciliegie, ai fichi, ma è spettacolare anche la nutella!!!). Poi incrocia le fasce tagliate, prima una di sinistra e poi una di destra e avanti così (dalla foto si capisce meglio come dev’essere l’effetto finale).
2. un uovo sbattuto spennellato sull’impasto darà una finitura dorata molto accattivante alla treccia cotta!
3. Fai lievitare la treccia a temperatura ambiente (90 F) per un paio d’ore, coperta con un foglio di plastica unto d’olio o di burro (se usi l’olio, non l’extravergine, è troppo saporito!), finché non sarà raddoppiata di volume.
4. Circa 20 minuti prima che finisca di lievitare, accendi il forno a 200°C.
5. Fai cuocere la vostra treccia in forno caldo per 10 minuti, poi abbassa la temperatura a 180°C, gira la treccia (in modo che la parte che era verso il dietro del fondo ora sia davanti) e fai cuocere ancora 15-20 minuti, finché non sarà dorata.
6. Falla raffreddare un pochino e servila tiepida o a temperatura ambiente.
7. La treccia si conserva 2 giorni in frigorifero o fino ad 1 mese in freezer.

Si da il caso, però, che invece la creatura sedicenne la adori... praticamente a Lignano c'era la trasferta di tutti i suoi amici/compagni di classe/centro estivo/etc/etc/etc...

E così abbiamo deciso di fare questo tentativo...

E' stato molto riposante, ma preferisco ancora le mie "vecchie" vacanze...

Comunque, eccomi tornata a casa...

Comb your hair! Danish Braid

Daring Bakers fear not difficulties, that’s obvious, but honestly I was a little afraid of heat my oven with such a hot weather!
By the way, who can resist a Danish Braid? So I dutifully kneaded this surprising laminated dough, with butter and turns, but also with yeast and turn on my oven… the real challenge, with the 30°C degrees we have in this days here in Italy!
And here I am, with my braids… !!! Thanks to Kelly os Sass&Veracity and Ben of What'sCooking for hosting!
I made four: two with the prescribed apple filling, one with nutella and the last one with cherries… Delicious!!!

And here's the recipe:

DANISH DOUGH (Makes 2-1/2 pounds dough)

Ingredients

For the dough (Detrempe)

1 ounce fresh yeast or 1 tablespoon active dry yeast

1/2 cup whole milk

1/3 cup sugar

Zest of 1 orange, finely grated

3/4 teaspoon ground cardamom

1-1/2 teaspoons vanilla extract

1/2 vanilla bean, split and scraped

2 large eggs, chilled

1/4 cup fresh orange juice

3-1/4 cups all-purpose flour

1 teaspoon salt

For the butter block (Beurrage)

1/2 pound (2 sticks) cold unsalted butter

1/4 cup all-purpose flour

DOUGH

Combine yeast and milk in the bowl of a mixer fitted with the paddle attachment and mix on low speed. Slowly add sugar, orange zest, cardamom, vanilla extract, vanilla seeds, eggs, and orange juice. Mix well. Change to the dough hook and add the salt with the flour, 1 cup at a time, increasing speed to medium as the flour is incorporated. Knead the dough for about 5 minutes, or until smooth. You may need to add a little more flour if it is sticky. Transfer dough to a lightly floured baking sheet and cover with plastic wrap. Refrigerate for 30 minutes.Without a standing mixer: Combine yeast and milk in a bowl with a hand mixer on low speed or a whisk. Add sugar, orange zest, cardamom, vanilla extract, vanilla seeds, eggs, and orange juice and mix well. Sift flour and salt on your working surface and make a fountain. Make sure that the “walls” of your fountain are thick and even. Pour the liquid in the middle of the fountain. With your fingertips, mix the liquid and the flour starting from the middle of the fountain, slowly working towards the edges. When the ingredients have been incorporated start kneading the dough with the heel of your hands until it becomes smooth and easy to work with, around 5 to 7 minutes. You might need to add more flour if the dough is sticky.

BUTTER BLOCK

1. Combine butter and flour in the bowl of a mixer fitted with a paddle attachment and beat on medium speed for 1 minute. Scrape down the sides of the bowl and the paddle and then beat for 1 minute more, or until smooth and lump free. Set aside at room temperature.

2. After the detrempe has chilled 30 minutes, turn it out onto a lightly floured surface. Roll the dough into a rectangle approximately 18 x 13 inches and ¼ inch thick. The dough may be sticky, so keep dusting it lightly with flour. Spread the butter evenly over the center and right thirds of the dough. Fold the left edge of the detrempe to the right, covering half of the butter. Fold the right third of the rectangle over the center third. The first turn has now been completed. Mark the dough by poking it with your finger to keep track of your turns, or use a sticky and keep a tally. Place the dough on a baking sheet, wrap it in plastic wrap, and refrigerate for 30 minutes.

3. Place the dough lengthwise on a floured work surface. The open ends should be to your right and left. Roll the dough into another approximately 13 x 18 inch, ¼-inch-thick rectangle. Again, fold the left third of the rectangle over the center third and the right third over the center third. No additional butter will be added as it is already in the dough. The second turn has now been completed. Refrigerate the dough for 30 minutes.

4. Roll out, turn, and refrigerate the dough two more times, for a total of four single turns. Make sure you are keeping track of your turns. Refrigerate the dough after the final turn for at least 5 hours or overnight. The Danish dough is now ready to be used. If you will not be using the dough within 24 hours, freeze it. To do this, roll the dough out to about 1 inch in thickness, wrap tightly in plastic wrap, and freeze. Defrost the dough slowly in the refrigerator for easiest handling. Danish dough will keep in the freezer for up to 1 month.

APPLE FILLING

Makes enough for two braids

Ingredients

4 Fuji or other apples, peeled, cored, and cut into ¼-inch pieces

1/2 cup sugar

1 tsp. ground cinnamon

1/2 vanilla bean, split and scraped

1/4 cup fresh lemon juice

4 tablespoons unsalted butter

Toss all ingredients except butter in a large bowl. Melt the butter in a sauté pan over medium heat until slightly nutty in color, about 6 - 8 minutes. Then add the apple mixture and sauté until apples are softened and caramelized, 10 to 15 minutes. If you’ve chosen Fujis, the apples will be caramelized, but have still retained their shape. Pour the cooked apples onto a baking sheet to cool completely before forming the braid. (If making ahead, cool to room temperature, seal, and refrigerate.) They will cool faster when spread in a thin layer over the surface of the sheet. After they have cooled, the filling can be stored in the refrigerator for up to 3 days. Left over filling can be used as an ice cream topping, for muffins, cheesecake, or other pastries.

DANISH BRAID

Makes enough for 2 large braids

Ingredients

1 recipe Danish Dough (see below)

2 cups apple filling, jam, or preserves (see below)

For the egg wash: 1 large egg, plus 1 large egg yolk

1. Line a baking sheet with a silicone mat or parchment paper. On a lightly floured surface, roll the Danish Dough into a 15 x 20-inch rectangle, ¼ inch thick. If the dough seems elastic and shrinks back when rolled, let it rest for a few minutes, then roll again. Place the dough on the baking sheet.

2. Along one long side of the pastry make parallel, 5-inch-long cuts with a knife or rolling pastry wheel, each about 1 inch apart. Repeat on the opposite side, making sure to line up the cuts with those you’ve already made.

3. Spoon the filling you’ve chosen to fill your braid down the center of the rectangle. Starting with the top and bottom “flaps”, fold the top flap down over the filling to cover. Next, fold the bottom “flap” up to cover filling. This helps keep the braid neat and helps to hold in the filling. Now begin folding the cut side strips of dough over the filling, alternating first left, then right, left, right, until finished. Trim any excess dough and tuck in the ends.

Egg Wash

Whisk together the whole egg and yolk in a bowl and with a pastry brush, lightly coat the braid.

Proofing and Baking

1. Spray cooking oil onto a piece of plastic wrap, and place over the braid. Proof at room temperature or, if possible, in a controlled 90 degree F environment for about 2 hours, or until doubled in volume and light to the touch.

2. Near the end of proofing, preheat oven to 400 degrees F. Position a rack in the center of the oven.

3. Bake for 10 minutes, then rotate the pan so that the side of the braid previously in the back of the oven is now in the front. Lower the oven temperature to 350 degrees F, and bake about 15-20 minutes more, or until golden brown. Cool and serve the braid either still warm from the oven or at room temperature. The cooled braid can be wrapped airtight and stored in the refrigerator for up to 2 days, or freeze for 1 month.

Maremma a cavallo

E’ stata una settimana fantastica!
Con mio marito e la creatura sedicenne siamo stati nel cuore della Maremma toscana, a Sorano, per una meravigliosa avventura a cavallo…

E pensare che nessuno dei tre c’era mai stato, a cavallo…
E pensare che mio marito non era nemmeno del tutto convinto ne valesse la pena…
E pensare che io temevo di avere un attacco di panico e di rimanere alla staccionata a guardare gli altri divertirsi…
E pensare che quando siamo arrivati ci hanno detto che erano 20 giorni che pioveva sempre…

Invece il nostro istruttore, Andrea, del Maneggio Belvedere, ci ha presi per mano e portati non solo a stare in sella, ma anche a poter trottare in campagna!! E che campagna! La campagna maremmana, un paesaggio collinare fatto di campi coltivati ad orzo, di boschetti di noci, di forre profonde e di speroni di tufo che si sollevano improvvisi, come torri di giganti.

Un grazie davvero di cuore ad Andrea, impagabile istruttore, senza di lui sarei ancora a piedi in qualche parte di Vitozza ed ad Aurora, una forza della natura al suo meglio, e perfino sembrava che fossimo bravi, a sentire loro!

Un grazie di cuore anche ai gestori del bed&breakfast Il Monte, che ci hanno fatto sentire a casa nostra, hanno allietato le nostre colazioni con racconti di terre lontane e ci hanno fatto assaggiare il loro meraviglioso olio!

Un profondo grazie all’Anticiclone delle Azzorre, che ha avuto compassione di noi turisti (e ancor più dei contadini che devono fare il fieno!) e si è piazzato saldamente sull’Italia per questa settimana.

E naturalmente grazie, ultimi, ma non ultimi, ai cavalli meravigliosi che ci hanno accettato in groppa di buon grado, sopportando la nostra mano maldestra e la nostra goffaggine nel sellarli e dissellarli: Napoleone, Pallino, Merlino, Petra e Gina: non sarà facile dimenticarvi!

L’unica consolazione è sapere che l’anno prossimo ci rivederemo!!!

Oh my! How late am I!!!! The deadline was the 1° of June for this “make-up-for-the-lost-time" daring bakers recipe!!! I’m very very sorry and I apologise for this!
A bit of a history: in our DBs forum a girl of great wit says to all the new DBs: why not a parallel challenge with the old DBs recipes? The recipes that came out when we weren’t Daring Bakers? Wonderful idea, so here I am, with the first of (I hope) many… hot buttered pretzeln. I made a sweet version, with just a pinch of salt and 3 spoons of sugar… enjoy!

Daring Bakers go out: a night at the Opéra

All my efforts are dedicated to Barbara and to her A Taste of Yellow – LiveStrong event: Thank you Barbara, for you bravery, your perseverance and for many things I’m just not able to put into words (especially English words!)

I have to admit that my first challenge with the Daring Bakers has blown gently for nearly an entire month in my kitchen, as an "aria" from my beloved Turandot, since I discovered which was the recipe I was supposed to bake…
I printed carefully the recipe and the rules and pinned both in my kitchen and then passed days and days speaking nothing but Opéra Cake (and I really appreciate your patience, my dear husband): trying to figure out how to prepare buttercream, flavour syrup and mousse, bake joconde and spread glaze (and I appreciate your “What’s?” and “Aha, indeed”, my dear husband, even if I suspect a hint, just a hint, of lack of attention)… and thinking perhaps I had dared too much, enrolling myself for the Daring Bakers Community (and thank you sooo much for your supportive “All this butter in a single recipe?!" and "13-I say-13 eggs!??!”, my dear etc…)!
I’ve never done before a buttercream, so my first attempt was a plain one, no flavour except vanilla. It came out well, indeed, but a little too buttery for my family (and for me, too, I have to admit)… so I went through another recipe, with egg withes instead, but it simply didn’t work: the cream separated and become grainy… perhaps because of the diced strawberries I put in…
So, nearly in panic now, I returned to the original recipe (in the meantime changed by the hosts in a less buttery one, which I really prefer…), with the hot syrup made with strawberry juice instead of water and, finally, it turns out beautifully!!!! At last the way was mapped out: I had decided for a strawberry flavoured Opéra Cake!
I prepared beforehand the buttercream (a week before, then frozen), the syrup (a week before, kept covered in the fridge), the day before I made mousse and joconde and all it turned out very well (I think that a nice stay in the fridge helps mousse and buttercream to set), even if my assembling really needs some practice!
I brought the cake to a dinner with my colleagues and it has been a successful “prima”, with a standing ovation for the orchestra…
And even my dear husband appreciate the Opéra Cake… even with "all-this- butter" and "13-I say-13 eggs"... (but I want to stress that the recipe claims 20 servings!!!)
So I’m very proud to introduce you, for the first time in this kitchen:

Almond Joconde
Strawberry syrup
Strawberry buttercream
Mousse au chocolat blanc
White chocolate glaze.
(Not a “daring” choice of flavours, I agreed, but for my first Opéra, I thought best stay with the Classics!!! Ah, and the recipe has been a happy choice of Fran and Shea and Lis and Ivonne: thank you, dear: I never have attempt on such a challenge without your spur).

And now… musica!

A Taste of Light: Opéra Cake

This recipe is based on Opéra Cake recipes in Dorie Greenspan’s Paris Sweets and Tish Boyle and Timothy Moriarty’s Chocolate Passion.

For the joconde

(Note: The joconde can be made up to 1 day in advance and kept wrapped at room temperate)

Ingredients:

6 large egg whites, at room temperature

2 tbsp. granulated sugar

2 cups ground blanched almonds

2 cups icing sugar, sifted

6 large eggs

½ cup all-purpose flour

3 tbsp. (1½ ounces) unsalted butter, melted and cooled

1.Divide the oven into thirds by positioning a rack in the upper third of the oven and the lower third of the oven.

2.Preheat the oven to 425◦F. (220◦C).

3.Line two 12½ x 15½- inch (31 x 39-cm) jelly-roll pans with parchment paper and brush with melted butter.

4.In the bowl of a stand mixer fitted with the whisk attachment (or using a handheld mixer), beat the egg whites until they form soft peaks. Add the granulated sugar and beat until the peaks are stiff and glossy. If you do not have another mixer bowl, gently scrape the meringue into another bowl and set aside.

5.If you only have one bowl, wash it after removing the egg whites or if you have a second bowl, use that one. Attach the paddle attachment to the stand mixer (or using a handheld mixer again) and beat the almonds, icing sugar and eggs on medium speed until light and voluminous, about 3 minutes.

6.Add the flour and beat on low speed until the flour is just combined (be very careful not to overmix here!!!).

7.Using a rubber spatula, gently fold the meringue into the almond mixture and then fold in the melted butter. Divide the batter between the pans and spread it evenly to cover the entire surface of each pan.

8.Bake the cake layers until they are lightly browned and just springy to the touch. This could take anywhere from 5 to 9 minutes depending on your oven. Place one jelly-roll pan in the middle of the oven and the second jelly-roll pan in the bottom third of the oven.9.Put the pans on a heatproof counter and run a sharp knife along the edges of the cake to loosen it from the pan. Cover each with a sheet of parchment or wax paper, turn the pans over, and unmold. 10.Carefully peel away the parchment, then turn the parchment over and use it to cover the cakes. Let the cakes cool to room temperature.

For the syrup

(Note: The syrup can be made up to 1 week in advance and kept covered in the refrigerator.)

Ingredients:

½ cup water

⅓ cup granulated sugar

1 to 2 tbsp. of the flavouring of your choice (i.e., vanilla extract, almond extract, cognac, limoncello, coconut cream, honey etc.)

1.Stir all the syrup ingredients together in the saucepan and bring to a boil.

2.Remove from the heat and let cool to room temperature.

For the buttercream

(Note: The buttercream can be made up to 1 month in advance and packed in an airtight container. If made way in advance, you can freeze the buttercream. Alternatively you can refrigerate it for up to 4 days after making it. To use the buttercream simply bring it to room temperature and then beat it briefly to restore its consistency.)

What you’ll need: a candy or instant-read thermometer

Ingredients:

1 cup granulated sugar

¼ cup water seeds of one vanilla bean (split a vanilla bean down the middle and scrape out the seeds) or 1 tbsp. pure vanilla extract (Note: If you are flavouring your buttercream and do not want to use the vanilla, you do not have to. Vanilla will often enhance other flavours but if you want an intense, one-flavoured buttercream, then by all means leave it out!)

1 large egg

1 large egg yolk

1¾ sticks unsalted butter, at room temperature

flavouring of your choice (a tablespoon of an extract, a few tablespoons of melted white chocolate, citrus zest, etc.)

1.Combine the sugar, water and vanilla bean seeds or extract in a small saucepan and warm over medium heat just until the sugar dissolves.

2.Continue to cook, without stirring, until the syrup reaches 225◦F (107◦C) [*Note: Original recipe indicates a temperature of 255◦F (124◦C), however, when testing the recipe I found that this was too high so we heated to 225◦F and it worked fine] on a candy or instant-read thermometer. Once it reaches that temperature, remove the syrup from the heat.

3.While the syrup is heating, begin whisking the egg and egg yolk at high speed in the bowl of your mixer using the whisk attachment. Whisk them until they are pale and foamy.

4.When the sugar syrup reaches the correct temperature and you remove it from the heat, reduce the mixer speed to low speed and begin slowly (very slowly) pouring the syrup down the side of the bowl being very careful not to splatter the syrup into the path of the whisk attachment. Some of the syrup will spin onto the sides of the bowl but don’t worry about this and don’t try to stir it into the mixture as it will harden!

5.Raise the speed to medium-high and continue beating until the eggs are thick and satiny and the mixture is cool to the touch (about 5 minutes or so).

6.While the egg mixture is beating, place the softened butter in a bowl and mash it with a spatula until you have a soft creamy mass.

7.With the mixer on medium speed, begin adding in two-tablespoon chunks. When all the butter has been incorporated, raise the mixer speed to high and beat until the buttercream is thick and shiny.

8.At this point add in your flavouring and beat for an additional minute or so.

9.Refrigerate the buttercream, stirring it often, until it’s set enough (firm enough) to spread when topped with a layer of cake (about 20 minutes).

For the white chocolate ganache/mousse

(Note: The mousse can be made ahead and refrigerated until you’re ready to use it.)

Ingredients:

7 ounces white chocolate1 cup plus

3 tbsp. heavy cream (35% cream)

1 tbsp. liquer of your choice (Bailey’s, Amaretto, etc.)

1.Melt the white chocolate and the 3 tbsp. of heavy cream in a small saucepan.

2.Stir to ensure that it’s smooth and that the chocolate is melted. Add the tablespoon of liqueur to the chocolate and stir. Set aside to cool completely.

3.In the bowl of a stand mixer, whip the remaining 1 cup of heavy cream until soft peaks form.

4.Gently fold the whipped cream into the cooled chocolate to form a mousse.

5.If it’s too thin, refrigerate it for a bit until it’s spreadable.

6.If you’re not going to use it right away, refrigerate until you’re ready to use.

For the glaze

(Note: It’s best to make the glaze right when you’re ready to finish the cake.)

Ingredients:

14 ounces white chocolate, coarsely chopped

½ cup heavy cream (35% cream)

1.Melt the white chocolate with the heavy cream. Whisk the mixture gently until smooth.

2.Let cool for 10 minutes and then pour over the chilled cake. Using a long metal cake spatula, smooth out into an even layer.

3.Place the cake into the refrigerator for 30 minutes to set.

Assembling the Opéra Cake

Line a baking sheet with parchment or wax paper.

Working with one sheet of cake at a time, cut and trim each sheet so that you have two pieces (from each cake so you’ll have four pieces in total): one 10-inch (25-cm) square and one 10 x 5-inch (25 x 12½-cm) rectangle.

Place one square of cake on the baking sheet and moisten it gently with the flavoured syrup.

Spread about three-quarters of the buttercream over this layer.

Top with the two rectangular pieces of cake, placing them side by side to form a square. Moisten these pieces with the flavoured syrup.

Spread the remaining buttercream on the cake and then top with the third square of joconde. Use the remaining syrup to wet the joconde and then refrigerate until very firm (at least half an hour).

Prepare the ganache/mousse (if you haven’t already) and then spread it on the top of the last layer of the joconde. Refrigerate for at least two to three hours to give the ganache/mousse the opportunity to firm up.

Make the glaze and after it has cooled, pour/spread it over the top of the chilled cake. Refrigerate the cake again to set the glaze.

Serve the cake slightly chilled. This recipe will yield approximately 20 servings.

BBD #10: Breakfast Bread! Sweet Dough by Richard Bertinet

Really really thank to Melissa for hosting this month BBD and I am really grateful to her for choosing such a delicious theme!

I found this recipe in the Gourmet site, with a really helpful video, too!

Here you can find the original recipe and here the video, featuring Richard Bertinet. I just add that it is really wonderful: texture, taste,.. it has been, since my discovering the recipe, my favourite breakfast bread, with just a hint of sweetness (not too much, however), perfect with my homemade plum jam.

With such a breakfast bread, it can't be a bad day, even on Mondays!!

I offer to you the recipe, converted in metric mesurement, but I strongly suggest to check the video: it really helps!

Ingredients:

240 ml whole milk
14 g fresh yeast

500 g bread flour
56 g unsalted butter, softened
45 g superfine granulated sugar
10 g teaspoons salt
2 large eggs

"Equipment:
a flexible plastic bowl scraper

Instructions:

heat milk until just warm. Rub yeast into flour in a large bowl, then rub in butter. Stir in sugar and salt. Fold in milk and eggs with bowl scraper, rotating bowl, until liquid is absorbed and a wet, sticky dough forms. (Dough will be wetter than most you’ve encountered).

Scrape dough out onto an unfloured surface.

(Dough will be a sticky mess. Don’t be tempted to add more flour. By working the dough through a process of repeatedly stretching and folding it over onto itself, trapping air, dough will become cohesive and supple.).
Slide your fingers underneath both sides of dough with your thumbs on top. Lift dough up (to about chest level) with your thumbs toward you, letting dough hang slightly. In a continuous motion, swing dough down, slapping bottom of dough onto surface, then stretch dough up and back over itself in an arc to trap in air. Repeat lifting, slapping, and stretching, scraping surface with flat side of bowl scraper as needed, until dough is supple, cohesive, and starts to bounce slightly off of surface without sticking, about 8 minutes.
Transfer dough to a lightly floured clean surface. Form into a ball by folding each edge, in turn, into center of dough and pressing down well with your thumb, rotating ball as you go. Turn ball over and transfer to a lightly floured bowl and cover with a kitchen towel (not terry cloth). Let rise in a draft-free place at warm room temperature until doubled, about 1 hour."

Then pre-heat the oven to 200 °C (392°F), shape the dough as you prefer (I usually shape braid) and bake them until lighlty brown, about 20 minutes.

Enjoy the delicious smell in your kitchen, then open a jar of the best jam you own - but chocolate cream, for instance nutella, will be just as effective ;) - and indulge!

Storia di una bomboniera... anzi due!

La nostra storia inizia un luminoso pomeriggio d’inverno… era il 22 gennaio 2007 e stavo andando alla mia prima lezione di patchwork: che emozione! Avevo ammirato il quilt della mia nuova vicina (quella nuova ero io ;)…) appeso in ingresso e quelli bellissimi portati a IdeaNatale dall’associazione La Zampa dell’Orso e così ero arrivata al negozio di patchwork BaLù, a Udine. Da lì a innamorarmi a prima vista di questa forma di artigianato artistico era stato tutt’uno. E così eccomi alla prima lezione del primo corso…
Dopo una rapida introduzione la nostra insegnante ci invitò a scorrazzare per il negozio per scegliere le stoffe con le quali avremmo (con un po’ di pazienza) confezionato la nostra prima coperta. Che meraviglia! Il negozio era fornitissimo e i colori, la consistenza, le fantasie… ah beh, una bella fatica per Cecilia riportarci al tavolo di lavoro! E ancora più fatica poi mettere in ordine, immagino!
Comunque tornai a casa entusiasta, con una borsa piena di stoffe ed un compito per casa: una piastrella Log Cabin da 31,5 x 31,5 cm
Ovviamente fuori dall’ambiente protetto del corso andai un po’ in panico: mi sembrava sacrilego rovinare quelle belle stoffe… e la paura di sbagliare e pasticciare era forte (con quello che costano, poi!!). Così scovai delle stoffe americane in offerta al Brico, scelsi dei colori che mi piacevano (e che risentivano molto del natale appena trascorso: un rosso, due verdi, un bordeaux, e due crema) e decisi di fare delle prove… Grazie all’innegabile capacità di Cecilia di insegnare uscirono 2 log cabin incredibilmente vicine alle misure che dovevamo rispettare… insomma, niente male per essere la prima volta (o quasi)!
Ripetei questa trafila per altre 2 lezioni… e così adesso avevo le mie piastrelle “ufficiali” e altre 6 piastrelle tutto sommato decorose di cui non sapevo cosa fare…
Pensa che ti ripensa, mi venne un’idea assolutamente FOLLE: se avessi confezionato altre 2 coperte, magari leggermente più piccole, da regalare a mia mamma e alla mia futura suocera come bomboniere per il matrimonio?!
Eh si, perché dopo 10 anni di convivenza avevamo deciso di sposarci e la data fatidica (in realtà già posticipata a causa di un incidente…) era stata fissata per il 07/07/’07 (era troppo bella per lasciarla passare!)
Mia suocera aveva visto i quilt di IdeaNatale e quando aveva saputo che facevo il corso aveva scherzato dicendomi “Me ne farai uno, vero?!” Beh, l’avrei presa in parola…
Così mi misi al lavoro in gran segreto: se non ci fossi riuscita almeno nessuno ci sarebbe rimasto male!

Fu un periodo intenso: una delle ultime lezioni dovevamo portare 3 piastrelle e per me questo significava doverne fare 9!!!
Comunque, riducendo un po’ il numero di piastrelle finali da 15 a 12 riuscii a terminare i top… si trattava ora di quiltarli. Esclusa l’ipotesi di farlo a mano mi iscrissi ad un corso per imparare a quiltare in free motion e lì mi venne l’illuminazione: avrei personalizzato il mio lavoro non solo con l’etichetta, ma anche con una quiltatura speciale: i nostri nomi e la data del nostro matrimonio!!!
Un lavoraccio!!! E tutto doppio!!!! Avevo riportato su carta la data e la scritta, ritagliato i pezzi e spillati sulla coperta; al termine, con santa pazienza, prima cucivo sopra la carta e poi pian piano la strappavo, in modo che restasse sulla stoffa solo la cucitura… Quando le ho portate al negozio delle bomboniere per farmele confezionare, la commessa ha preso in mano le coperte come se fossero oro!

Alla fine tutto era pronto in tempo, mancava solo la faccia delle due mamme… beh, non farete fatica a credere che è stato uno dei momenti più emozionanti di tutto il mio matrimonio!!!

Tornare in corriera...

Dopo l'incidente in moto la strada mi fa più paura...

Sono stata fortunata: ho rotto una spalla e tre costole, ho avuto un pneumotorace con versamento, mi hanno letteralmente aperto una caviglia (ci sono voluti 8-mesi-8 per chiudere la ferita) e ho fatto un po' di giorni in Terapia Intensiva e quasi un mese in ospedale...

Però le gambe sono ancora tutte e due le mie... e anche mio marito, che ha rotto la tibia, cammina sulle sue, di gambe... e sulle sue gambe è tornato a fare scialpinismo, bontà sua...

Chi va in moto sa che una delle conseguenze più diffuse dello scontro laterale macchina-moto è che il/la motociclista ci rimette un pezzo di gamba... di solito dal ginocchio in giù... "E' un classico" hanno detto i fisioterapisti, che davvero ne vedono di tutti i colori e per i motivi più svariati...

Fatto sta che sia per questo motivo, che per motivi strettamente ecologici (lavoriamo entrambi nella stessa città e spesso iniziamo alla stessa ora), abbiamo deciso di andare a lavorare assieme con una macchina, poi io torno in corriera (i nostri orari coincidono meno spesso che all'andata)... almeno se non devo fare la spesa.

E per passare il tempo in corriera mi porto l'MP3... ma così avevo "assolutamente" bisogno di un porta-MP3, naturalmente... tutte le quilters sanno cosa significa quell' "assolutamente"... e anche lo sanno le cuoche dilettanti (come me): vuol dire che dovrai infilarti in un negozio di stoffe/articoli da cucina e portarti a casa l'occorrente per cucire/decorare una torta, etc.

E così ho fatto... per fortuna che un libro con dei progetti interessanti di borse e trousse lo avevo già (non ridete: è in giapponese, guardo solo le figure, grazie al cielo molto chiare!), così ho evitato almeno quella, di spesa...

Poi ho pensato che il mio MP3 è uguale a quello della "creatura" sedicenne... e così ne ho fatto uno anche per lei...

Siccome il libro era giapponese, anche la stoffa che ho preso è giapponese... adesso è molto più piacevole tirare fuori dalla borsa il mio MP3, nella sua custodia home-made e pure personalizzata col mio nome... adoro il patchwork!

Brandade

Una ricettina molto nordica, ideale per far mangiare il pesce a chi non lo ama, da farsi con pesci molto “carnosi” (se così si può dire!), come il merluzzo, l’haddock (previsto dalla ricetta originale) o, come nel mio caso, il pangasio.

Ingredienti per 4 persone:
300 g di filetti di pangasio, latte, 3 patate, aglio, timo, rosmarino e olio d’oliva (si intende extra-vergine)

Cuocete le patate in acqua leggermente salata (o a vapore, se preferite), poi sbucciatele e schiacciatele grossolanamente con una forchetta.
Mettete dell’olio a scaldare (meglio se a bagnomaria) con un rametto di timo, uno di rosmarino e dell’aglio (a piacere, la ricetta originale ne chiedeva 3 spicchi, io ne ho messo solo uno) e lasciatelo andare per una quindicina di minuti, facendo molta attenzione che le erbe non si brucino.
Nel frattempo scaldate il forno a 180°, mettete i filetti di pangasio in una casseruola da forno e versatevi sopra il latte, in modo da coprirli a filo, cuoceteli per 15-20 minuti e poi tirate fuori la pentola e lasciate raffreddare il pesce nel latte.
Scolate i filetti di pesce, spezzettateli con una forchetta e uniteli alle patate.
Condite il tutto con l’olio, filtrato con un colino.
Eventualmente aggiungete del liquido di cottura del pesce per rendere la brandade più morbida.
Regolate di sale e servite.

A “nordic” recipe, suitable for big fish as codfish, haddock,..

Ingredients:
300 g haddock’s fillets, 3 potatoes, some milk, garlic, thyme, rosemary, extra virgin olive oil.

Pre-heat the oven at 180°C (356°F). Let cook potatoes in slightly salted water, then peel them and squash them with a fork.
Put some oil in a pan (better in water bath) and warm thyme, rosemary and a clove of garlic for about 15 minutes, but be very careful not burning the herbs!
In the meantime, put the fillets in a baking pan and pour enough milk to cover them, cook the fillets in the oven for 15-20 minutes, then take them out and let cool the fish in the milk.
Drain the fillets, dice them with a fork and add them to the potatoes.
Dress the brandade with the aromatic oil, strained (if it seems too dry, you can add some of the remnant milk). Season with salt.
Serves 4.

Ieri una giornata di vera Primavera! Finalmente!!

Così con i nostri amici abbiamo deciso un'uscita da casa nostra fino a Pulfero, circa 25 km da noi. Per testare anche un po' la nostra forma fisica, in previsione della gita lungo la ciclabile della Salzkammergut prevista per il ponte del 2 giugno...

Siamo partiti da casa con un bel sole e tanta voglia di pedalare e siamo stati ripagati da un giro bellissimo, con pochi tratti di strada trafficata: per la maggior parte abbiamo pedalato su strade secondarie. Consiglio in particolare, per chi volesse provarlo, la strada parallela alla statale delle Valli del Natisone, che scorre a fianco del fiume, tra borghi e boschi di rara bellezza!

Ah, dimenticavo, anche un paio di pancake non ci starebbero male...

La ricetta è americana, quindi va in italiano...

BASIC PANCAKES (or waffles)

Ingredienti:
150 g di farina
2 cucchiaini di lievito per dolci
1/2 cucchiaino di sale
da 1 a 5 cucchiai di zucchero (dipende da quanto dolci li volete: con 1 sono neutri, con 5 sono delle focaccine dolci)
2 uova (separate)
310 ml latte (se usate questa ricetta per fare delle waffles, usate solo 240 ml di latte)
3 cucchiai di olio (in questi casi io uso quello di vinacciolo per il suo sapore neutro)

In una terrina mescolate farina, lievito, sale e zucchero.
A parte montate gli albumi a neve.
In un'altra terrina sbattete leggermente i tuorli (usate pure le fruste che avete usato per gli albumi: non serve lavarle per questo passaggio), aggiungete il latte e l'olio, mescolando bene.
Unite gli ingredienti liquidi a quelli "asciutti" (non viceversa) e mescolate bene. Infine unite gli albumi montati.
Scaldate una padella leggermente oliata e mettete un mestolo di impasto, in modo da formare una focaccina non troppo sottile. Cuocete finché la superficie non sarà asciutta e si saranno formate delle bollicine. Girate il pancake e cuocete dall'altro lato, finché la superficie non si colora.

Con queste dosi dovrebbero venire circa 12 pancake da 10 cm di diametro.

P.S.: per fare delle waffles serve l'attrezzo apposito. Anche lì un piccolo mestolo di impasto nella waffle-maker calda. Non dimenticate di girarla a metà cottura.
